Quiet Summer Days by the Fjord | Fishing, Cooking & Time with My Son

Summer is in full swing, and I had a long-awaited visitor — my son. We spent a few quiet days together. We went fishing, grilled fresh fish, and watched beautiful sunsets over the fjord. We caught a pike, which I turned into homemade fish cakes, as well as a perch and a trout. I guess I’m not much of a fisher, though—after catching another fish, I decided we already had enough, so we let it go back into the lake. I was simply happy. Of course, I also baked a lingonberry pie. You’ll find the recipe below. I decided to leave this video without a voice-over, hoping it will give you a quiet moment to slow down and simply enjoy being here with us. Talvi, my sweet little Corgi friend, has now gone back home. I’m deeply grateful for all the love she brought into my life while she was here. Every day reminds me how rich life truly is—not because of what we own, but because of the people we love, the moments we share, and the beauty we’re able to see and feel around us. See you soon. ❤️ Lingonberry Pie Recipe Dough 250 g flour 130 ml warm milk 8 g instant dry yeast 30 g sugar 45 g butter (softened) 1 egg yolk (+1 for brushing) ¼ tsp salt Filling 300 g lingonberries 150 g sugar 25 g cornstarch Instructions 1. Mix the warm milk, yeast, sugar, and salt. Let sit for 15 minutes. 2. Add the yolk, butter, and flour. Knead into a soft dough. Cover and let rise for 1 hour. 3. Cook the lingonberries with the sugar and cornstarch over medium heat until thickened (about 5 minutes). Let cool. 4. Punch down the dough and let it rise for another hour. 5. Roll out ⅔ of the dough and place it into a pie dish, forming the edges. Add the cooled filling. 6. Roll out the remaining dough, cut into strips, make a lattice on top, and brush with egg yolk. 7.
