Ideas for leftover juice pulp: try these vegan pulp crackers for a low-calorie snack! These Veggie pulp crackers are amazing and so much tastier and healthier than any store-bought cracker. Enjoy! Vegetable Pulp Crackers If you're a regular juicer like me, you can save a LOT of money in crackers if you choose not to waste your pulp. Ingredients: • 2 1/2 cups leftover vegetable pulp • Water to thin dough if necessary. • 1/2 cup flaxseeds or almond flour • 1/2 cup ground flax meal • 1/4 cup sesame seeds • 1/4 cup chia seeds • 1/4 cup hemp seeds • 1 large Jalapeno chili, seeds removed • 1 teaspoon curry powder • 1 teaspoon sea salt Instructions: 1. Combine all the above ingredients in a food processor until the mixture resembles a tacky dough. Spread the mixture on a parchment-lined baking sheet. Place another sheet of parchment over the mixture and roll out the dough. Roll the dough to about 3-4mm thick. 2. Remove the top piece of parchment. 3. Score the dough in the desired shape of crackers. 4. Bake at 350 degrees for about 45 minutes. You can also make this into pizza. All you need to do is roll the crackers out to the size of a pizza base (and leave them a little thicker than a cracker) and bake them for less time (so not super crunchy) so as to create a raw pizza base. I love to spread the crackers with homemade pesto, fresh tomatoes, or any of your favorite combos. Want more?
