Weird but Delicious Zero Waste Hack for Juice Pulp // Sustainable Living Journey

This Zero Waste Hack to turn leftover juice pulp into sushi was so delicious and I will definitely be making it again! Packed full of raw vitamins and minerals this juice and sushi was the ultimate boost in energy I needed. I love learning new low waste hacks to maximise my garden's produce. I have used a majority of vegetables for this juice rather than fruit to make sure that it would taste good for sushi. The little bit of fruit I did add didn't make much difference to the pulp flavour as it was mainly carrot and beetroot. I love making homemade sushi as it is just so yummy and an easy way to use up small amounts of leftovers veggies. The first time you make sushi it can be a bit tricky but once you get to do it a few times it is super easy. Store your rolls whole in the refrigerator until you are ready to use them (will keep ok a day or so in the fridge). This is will also help them hold their shape and be easier to cut.
