This is Behind the Counter at Isekane, a family-owned business that’s been crafting their traditional Japanese fish cakes of all sorts including kamaboko and chikuwa since 1830. Now run by the family’s 6th generation owner, the company blends a fresh, youthful spirit with the time-honored tradition of Odawara Kamaboko craftsmanship. The current owner has been working at the shop for 15 years now, ever since graduating from university. 5 years ago, he officially took over the family business and now the family’s legacy rests in his hands as he honors their past while also responsible for shaping their businesses future. Their traditional Chikuwa Fish Cakes are made from a paste called surimi— a blend of white fish, salt, sugar, starch, mirin, kelp powder and egg whites.
