Today, I’m taking you back to my old courtyard in rural China. Hidden among the green vines is a special summer ingredient that many people outside China have never seen before — luffa shoots. Most people know luffa for its fruit, and some even know it as a natural sponge. But in many parts of China, we also enjoy eating the young tender tips of the vine. I’ll pick the freshest shoots from my garden, blanch them quickly, and turn them into a simple and refreshing Chinese summer salad. For me, food is not only about taste.
