I Put Fries Inside a Chicken Burrito… Californian Style 👌😊👍 | POV Cooking

Today’s special started as a Californian-style chicken burrito idea, but like most real kitchen specials, the final version came together as the morning went on. I used grilled roasted chicken breast seasoned with BBQ sauce, chipotle paste, chimichurri, salt and pepper. For the fries inside the burrito, I made a mix of normal potato and sweet potato shoestring fries, fried until crisp, then seasoned with salt, pepper and smoked paprika. For the burrito build, I melted cheese onto the tortilla on the griddle, then added the seasoned chicken, smoky pepper guacamole, and the mixed shoestring fries before rolling it up. The pepper guacamole was made with avocado, celery, peppers cooked in the leftover chicken juices, garlic mayo and a touch of liquid smoke. On the side, I made a shredded salad with cabbage, beetroot, tomato, cucumber and red onion, finished with the rest of the chimichurri. This video starts with an extra-long delivery segment. I kept it in because it has a real kitchen ASMR feel, and it shows how much work happens before what looks like a simple lunch special even begins.
