Welcome back! Today’s special was a fusion burrito made during a busy service. I used jasmine rice steamed and mixed with ginger, garlic, coriander, sesame oil and soya sauce, then combined with bean sprouts. For the filling, I made shawarma-spiced pork belly and chicken breast, with a crunchy slaw of red cabbage, carrot, cucumber and pickled ginger. Inside the wrap: – Mango chutney – Rice and bean sprouts – Slaw – A bit of kimchi for some funk – Pork belly or chicken Wrapped and served with matchstick crisps seasoned with Chinese salt & pepper. Not traditional, but that’s the point — making something interesting in a real working kitchen.
