Despite life's difficulties, life in the village goes on, and every day brings small moments of happiness. 🍩🍩🍩Crumbly Semolina Cookies Ingredients: 2 eggs, 125 g sugar, 125 ml vegetable oil, 125 ml yogurt (sour cream, kefir), zest of one lemon, 1 tablespoon apricot jam, a pinch of salt, a packet of baking powder, vanillin, 500-600 grams of semolina, powdered sugar for rolling the cookies Preparation: Add sugar, vegetable oil, raisins, yogurt, salt, vanilla extract or vanillin to the eggs. Mix well. Add the lemon zest. Add baking powder to the semolina, mix well, and gradually add it to the egg mixture. Knead the dough. The dough will be slightly uneven and won't stick to your hands. Let the dough rest for 30 minutes, then roll into walnut-sized balls and roll in powdered sugar.
