The Art of Slow Living | Lobster Rolls, Crafts & No Talking

Welcome to our home in the Canadian Countryside 🩷 We woke to a surprising blanket of spring snow, transforming the countryside into a peaceful winter scene once again. As the day slowly warmed, my parents surprised us with fresh lobsters from next door, inspiring a simple homemade meal to share together. We baked soft homemade buns, showed how to remove the meat from a lobster, and prepared traditional lobster rolls using lobster, celery, green onions, mayonnaise, and a few simple seasonings. Sometimes the simplest meals become the most memorable. Throughout the day, we worked on a few creative projects around the home—adding outdoor protection to a cherished thrifted folk art painting, turning leftover fabric scraps into simple wall hangings, and creating a homemade hummingbird bath to welcome returning visitors to the garden. We also shared a simple trick to make inexpensive hummingbird feeders easier to use. Later, we visited our local thrift store in search of little treasures and inspiration, enjoying the simple pleasure of browsing and imagining new life for forgotten things. Let sit for 5–10 minutes until foamy. Make the dough Add the oil and salt. Stir in the flour, one cup at a time, until a soft dough forms. Knead Knead for about 8–10 minutes by hand (or 5 minutes in a mixer) until smooth and elastic. The dough should be slightly tacky but not sticky. First rise Place dough in a lightly oiled bowl. Cover and let rise until doubled, about 1 hour. Shape the rolls Divide into 6 rolls for lobster rolls Place on a parchment-lined baking sheet. Second rise Cover and let rise 30–45 minutes, until puffy. Bake Bake at 375°F (190°C) for 15–18 minutes, or until golden brown. Finish Brush tops with a little melted butter while warm for softer rolls. Homemade Lobster Roll Filling Ingredients Meat from 4 cooked lobsters, chopped into bite-sized pieces 1/3 cup mayonnaise 2 celery stalks, finely diced 3 green onions, thinly sliced 2 tbsp fresh parsley, chopped A few dashes of hot sauce (optional) Salt and pepper to taste Instructions Remove the meat from the lobsters and chop into bite-sized pieces. In a large bowl, combine the lobster, celery, green onions, and parsley. Add the mayonnaise and gently stir until everything is lightly coated. Season with salt and pepper to taste. Add a few dashes of hot sauce if desired. Chill until ready to serve. Serve on soft homemade buns with a little extra parsley or green onion on top. 🌿 Simple ingredients, fresh lobster, and homemade buns make for a classic East Coast meal. 🦞🇨🇦
