Ingredients: 1.2 kg of pre-cooked pumpkin (for this you need to buy double the weight, or 3 kg) 20g of baker's yeast 100ml of warm milk 1/2 kg (500g) of flour 4 eggs 1 dessert spoon of vanilla extract, or if you like, add 1 shot of brandy. Zest of 1 lemon or orange (optional) Sugar to taste (I use 3 tablespoons) 1 pinch of salt 250g of sugar 1 tablespoon of ground cinnamon Oil to taste Preparation: Cook the pumpkin and drain well. You can leave it overnight to remove excess moisture; you can leave it in a sieve. Prepare the yeast by mixing 1 tablespoon of sugar, 1 tablespoon of flour, the crushed yeast, and the warm milk. Beat well in a large glass and let it rest for 15 minutes in a place where there is no cold or draft. Mash the already squeezed pumpkin, add the flour and sugar, and if you like, a teaspoon of vanilla and continue kneading. Add the eggs one by one and knead constantly, then add the risen yeast. The dough will be soft and easy to work with a spoon. You can start mixing with a wooden spoon. Cover the dough and let it rise for half an hour to 1 hour or until it doubles in size. Heat the oil well for frying. Place spoonfuls of the mixture and fry well on both sides. Place the fritters to drain on absorbent paper. Roll in sugar and cinnamon.
