I brought a pro who has said to have studied in Italy for 2 months and ate it the right way. The results...? The t-bone steak Edmmer cooked was like armpit sweat. The video was too long so there are some deleted parts. In the beginning, when we put a grill on top of the pan and cooked it on low heat for 30 minutes is called "reverse searing". The thickness of the meat was about 5.5cm~6cm so if you want the insides to cook you want to use that method.
