Salt Baked Fish | Salt Crusted Fish | Salt crusted Stripped Bass

Salt crusted or salt baked fish cooks the fish evenly and it maintains the moisture in the fish. Here is the ingredient I used for prepping the fish 1 Medium sized gutted but un-scaled Stripped Bass 1 large lemon 2 stalks of lemon grass 1 bunch cilantro or tarragon or parsley 6 cloves of garlic Salt and pepper Rub salt and pepper on the outside, it will eliminate any fishy taste. Rub salt and pepper in the cavity of the fish. Stuff the cavity with lemon slices, lemon grass, garlic &cilantro Neatly tuck in all the ingredients in the cavity and let the fish rest. Take 2 and 1/2 lbs of salt 1 cup water Mix salt and water until the consistency looks like snow or when you take a handful of salt it forms a patty shape. take a baking pan layer with salt, about 1/3 of an inch add lemon slices, garlic, lemon grass and cilantro gently place the fish in the salt bed add more lemon slices on top of the fish, lemon grass, garlic and lemon grass. Cover the fish with salt, top layer of the salt should be about 1/2 an inch thick. You can either cover the whole fish with salt or leave the tail fin and mouth open. Bake the fish in the 400' F preheated oven for 45-50 minutes. Once its out of the oven , let it sit for 10-15 minutes. Crack open the salt crust.
