Salmon Soba Bowl: Backpacking Meal

Soba Noodle Bowl with PNW Mushrooms and Smoked Salmon 3 oz package smoked salmon 1/2 oz dried mushrooms 3 oz soba noodles 1 teaspoon sesame seeds 1/4 teaspoon salt 1/4 teaspoon ginger 1/4 teaspoon garlic 1/8 teaspoon red pepper flakes 1 tablespoon soy sauce 2 teaspoons toasted sesame oil Optional: Handful of foraged or dehydrated greens AT HOME: Package the mushrooms and the soba, sesame, ginger, garlic, red pepper flakes and salt into two small zip top bags. Combine the soy sauce and sesame oil in a resealable container. Pack along the salmon. AT CAMP: Bring 2 cups water to a boil in a small cook pot. Add the mushrooms to the pot and simmer until the mushrooms tender. Add the soba and spices and simmer until the soba is cooked through. Add the greens, if using. Flake the salmon over the top and serve.
