Chickpea and Eggplant Curry - saucy, warmly spiced, flavourful #easyrecipe

A vegetarian dish that is saucy, flavorful, warmly spiced and quick to make is what I share in this video. This hearty chickpea and aubergine or eggplant curry is filled with creamy chickpeas, cubes of tender eggplant, onions, garlic, ginger, juicy tomatoes and lots of warming spices, including cumin, coriander and paprika. The curry doesn’t require a very long list of ingredients, is the ultimate in vegetarian comfort food and best of all it is ready in around 30 minutes. Also, don’t forget to look out for an encouraging word from the scriptures to nourish your spirit. INGREDIENTS (serves 4) 5 tbsp Cooking oil 4 medium Eggplants, cubed 1 C Chopped onions 1 C Chopped green peppers 1 tbsp Grated ginger 1 tsp Minced garlic 1 tsp Chopped chillies 3 C Chopped tomatoes 1 tbsp Cumin 2 tsp Coriander 1 tsp Paprika ¼ tsp Turmeric ¼ tsp Chili flakes 1 Veggie stock cube 2 Cans Chickpeas, rinsed and drained 300ml Water ½ C Coconut milk Salt to taste Enj😄y.
