I love a good crispy onion ring and this is my recipe for the best onion rings I’ve ever eaten (and I’ve eaten a lot of onion rings) perfectly crispy, light and airy, with a perfect golden crust, these pair with just about anything! Whether it’s bbq, burgers or steak night, you need these beer battered onion rings! (You can easily substitute the beer for cream soda or sparkling water if you don’t cook with beer) Ingredients 2 large Vidalia onions, sliced ½-inch thick 1¼ cups all-purpose flour ½ cup cornstarch 2 tsp baking powder 2 tsp kosher salt 1 tsp black pepper 1 tsp paprika ¾ tsp garlic powder ½ tsp onion powder ¼ tsp cayenne (optional, won’t make them spicy) 12 oz ice-cold Miller High Life (or club soda) neutral oil or tallow for frying Method 1. Slice onions into ½-inch rings. 2. Soak in ice water for 20–30 minutes. 3. Dry extremely well. 4. Reserve about ¼ cup of the flour mixture to lightly dust the onions before battering. 5. Whisk the remaining dry ingredients together. 6. Pour in the cold beer or club soda and stir just until combined. The batter should be slightly lumpy. Don’t overmix. 7. Dip each floured onion ring into the batter, allowing just a little excess to drip off. 8. Fry 2–3 minutes until a deep golden brown. 9. Drain on a wire rack and immediately sprinkle with flaky salt.
