The basic recipe for crepes, the well-known French waffles, soft, elastic, and thin, or Crespelle as we call them in Italy. They're made with just a few simple ingredients: eggs, milk, flour, oil, and a pinch of salt. This neutral batter is suitable for both a sweet filling for delicious breakfasts and snacks, or a savory filling for succulent first courses. The rather runny and fluid batter should be cooked in a crepe maker, a round, low-sided griddle. The same one I used can be found on the Fonderia Maggiori website (https://www.fonderiamaggiori.it/). It's made of thick aluminum with a triple-layer, non-stick stone-effect coating, so it doesn't need to be greased with oil or butter, which I recommend if you're using a regular pan. Once cooked, if you don't eat them all, the crepes can be stored in the refrigerator, covered with plastic wrap, for up to 3 days. Whether you want to use them for breakfast or as a snack, simply heat them for a few seconds in the crepe maker or microwave and fill them with Nutella, honey-caramelized apples, or dark chocolate and fresh fruit, to name a few.
