Cheese with my milk kefir by Claudia B Milk kefir is a drink resulting from the fermentation of raw milk (as opposed to yogurt, where the milk is cooked) with kefir grains placed in goat's or cow's milk. Kefir grains are living microorganisms that multiply when placed in favorable conditions. During the fermentation process, lactic acid bacteria convert the lactose in milk (its sugar) into lactic acid, alcohol, and carbon dioxide. The resulting milk kefir is rich in probiotics. According to the WHO, the World Health Organization, probiotics are living microorganisms that work synergistically with our microbiota and have beneficial effects on our intestinal health. Kefir can be consumed as is or used in various ways. Here, the kefir is strained to make cheese. As with any new food, start by testing it and checking your body's reaction and tolerance.
