What is milk kefir? by Claudia B Milk kefir is a drink resulting from the fermentation of raw milk (as opposed to yogurt, where the milk is cooked) with kefir grains placed in goat's or cow's milk. Kefir grains are living microorganisms that multiply when placed in favorable conditions. During the fermentation process, lactic acid bacteria convert the lactose in milk (its sugar) into lactic acid, alcohol, and carbon dioxide. The resulting milk kefir is rich in probiotics. According to the WHO, the World Health Organization, probiotics are living microorganisms that work synergistically with our microbiota and have beneficial effects on our intestinal health. You can drink kefir as is or use it in various ways: pancakes, smoothies, gratins, etc. You can also do a second fermentation with fruit for a sweeter taste.
