Ingredients Chicken Broth 1 chicken carcass, cut into chunks 40g turnip 30g celery, cut into chunks 1500g water 1 teaspoon salt Soup 100g carrot, cut into chunks 80g leek (white part), sliced 1 garlic clove 50g olive oil 70g dry sherry 100-120g rice 1 tablespoon chopped fresh parsley Preparation: Chicken Broth: Place the chicken carcass, turnip, celery, water, and salt in the mixing bowl. Set for 30 min/100°C/speed 1. Pour into a bowl through a fine-mesh strainer and reserve the broth. Remove any meat from the chicken carcass and set aside. Soup: Add the carrot, leek, garlic, and oil. Chop for 5 seconds/speed 5 and sauté for 6 minutes/120°C/speed 1. Add the dry sherry and set for 1 minute/Varoma/speed 1, without using the measuring cup, to promote the alcohol's evaporation. Add the rice and the reserved chicken broth and set for 16 minutes/100°C/speed 1. Pour into a soup tureen, add the reserved chicken, and sprinkle with chopped parsley. Serve immediately.
