Today we have a strawberry rare cheese cake that is perfect for a Christmas cake. This recipe does not require an oven and can be chilled and hardened. ▷Ingredients (15 cm dia. round) ■Strawberry rare cheese cake 90 g cookies 30g unsalted butter 150g cream cheese 25g sugar 3g powdered gelatin 20g water 110 g whipped cream ・200ml whipping cream ・20 g sugar 5 g strawberry powder ■Honey lemon jelly 75 g water 10 g powdered gelatin 10ml lemon juice 20g honey 225g hot water 1 pack of strawberries (small, about 18-20 pieces) ■Yogurt mousse 50 g cream cheese 100 g non sugar yogurt 25 g sugar 20 g water 3 g powdered gelatin Whipped cream 5 ml lemon juice ▷How to make 1. make a strawberry rare cheese cake. Break the cookies into small pieces and blend them with melted unsalted butter. Lay the cookies flat in a mold lined with a cookie sheet. The cookie sheet should be hard, firm, and washable. 2. Place the rare cheese cake on top of the cookies and flatten. Arrange the strawberries on top and refrigerate for 1 hour. 6. 6. Make the lemon jelly. Sprinkle gelatin powder over water to soften. 7. Add lemon juice and honey to hot water and mix to dissolve. Add the gelatin from step 6) and mix. 8. Pour the lemon jelly over the chilled strawberry rare cheese cake and refrigerate for 2 hours. 9. Make the yogurt mousse. Mix cream cheese, unsweetened yogurt and sugar until smooth. 10. Sprinkle powdered gelatin over water and blitz. Dissolve in boiling water, add to ② and mix. 11. Add the cream left over from the strawberry rare cheese cake and mix. Add lemon juice and mix. 12. Pour the mixture over the hardened lemon jelly and refrigerate overnight.
