Welcome to 「酒滿飯寶 Chef Po」channel. Today I’m making a dish many viewers requested: “Chinese Chive Flowers with Squid and Dried Shrimps” (《小炒王》). You can use either Chinese chive flowers or garlic shoots—go with what you like. At the restaurant we usually use garlic shoots. For cashews, blanch briefly in hot water so they fry up lighter in color. Soak dried shrimp and dried squid for about 10 minutes. The method isn’t difficult—there are just a few more steps. Follow my process and you’ll nail a tasty result. Chinese Chive Flowers with Squid and Dried Shrimps Ingredients: Chinese chive flowers — 2 bunches Fresh squid — 1 Dried squid — 37.5 g Dried shrimp — 50 g Char siu — 100 g Preserved radish — 70 g Cashews — 100 g Red and yellow bell peppers — to taste Ginger, shallots, minced garlic — to taste Seasoning: Salt — 1/2 tsp Sugar — 1 tsp XO sauce — 1 tbsp White pepper — 1/2 tsp Jiujiang rice wine — 1 tbsp Maggi Seasoning — 1 tbsp Sesame oil — 1 tbsp *The above seasoning amounts are for reference.
