I made the perfect yum woon sen! The amount of ingredients is incredible! (It's hard to find in other recipes.) 200g of shrimp! Adding that much is like a dream! ✨ Since I'm making it at home, I went all out and made this bold yum woon sen! Give it a try! Yum Woon Sen (Genki Mama Style) Dressing 1-2 chili peppers, seeds removed and chopped (I don't remove the seeds, by the way) 2 tablespoons fish sauce 2 tablespoons lemon juice (make sure to use fresh lemon) 2 tablespoons honey (add more to taste) *Mix everything together. If it's too sour, you can add a little more honey. Make a larger batch and keep it in the refrigerator for up to a week. Vermicelli: 70g: Domestic vermicelli is recommended as it's chewier than mung beans (you can also use mung beans if you don't have them). Peeled shrimp (large shrimp are best): 200g (cut in half if large). Ground pork: 150g Spring onion: 1/2: Red (purple) onions are also recommended as they have a less spicy flavor. If you don't have either, cut a regular onion, soak it in water for about a minute, then squeeze it. Cherry tomatoes: 5-6: Regular tomatoes will be watery, so use cherry tomatoes. Cilantro: 1-2 heads: Roughly chop the leaves and finely chop the stems. If you don't like coriander, you can also use radish sprouts, celery, mitsuba, or shungiku! 1. Mix the dressing first. Remove the stems from the cherry tomatoes and cut them in half. Thinly slice the spring (red) onion. Place the cherry tomatoes and spring onions in a large bowl and chill in the refrigerator. ② Boil water in a pot and cook the vermicelli according to the package instructions. You will still need the water, so don't discard it. Transfer the vermicelli to a colander and rinse under cold water to cool thoroughly. Drain thoroughly in the colander. (You can also wrap it in a kitchen towel and wipe off the water.) *Draining the vermicelli so that it sticks together will prevent the dish from becoming watery and make it more delicious. ③ Add a little salt and a little Shaoxing wine (or sake if you don't have it) to the same water as a charm, just enough to add some salt. This is just for a charm, so use the appropriate amount. Once boiling, cook the shrimp. Cook in simmering water for 2-3 minutes (do not boil). Skim off the scum and drain in a colander. Cook the pork. Lightly fluff it in the water. Once cooked, drain in the same colander as the shrimp. *The texture of the pork is better if it's roughly shredded, so you may want to squeeze the package tightly before adding it to the boiling water. ④ Take the bowl of vegetables out of the refrigerator and toss with 1 tablespoon of dressing. Next, add the shrimp and pork, and toss with 1 tablespoon of dressing. Next, add the vermicelli, and toss with 1 tablespoon of dressing, aiming for the vermicelli. Check the overall flavor and adjust the dressing accordingly. *You can also make it a little thin and let each person add dressing as they eat! ⑤ To finish, mix in the cilantro and serve.
