Tarte aux tomates anciennes et oignons caramélisés | 750g

Today we're back with a quick and easy recipe that's sure to be a hit with everyone: Tomato and Onion Tart! The crispy crust, the tenderness of the tomatoes, and the zest of the onions... As a starter or main course, hot or cold, one thing's for sure, you'll be asking for it at every meal! For the homemade shortcrust pastry: 250g white wheat flour 125g butter 6cl cold water 1 egg yolk 1 large pinch of salt or fine salt For the onion compote: 1 tablespoon olive oil 6 onions Salt Pepper 25cl water 1 teaspoon maple syrup 1 tablespoon balsamic vinegar For the filling: 1 tablespoon mustard 6-8 tomatoes of various colors 40g Parmesan cheese Fresh basil for serving Preparation: The shortcrust pastry: Place the flour in a bowl. Add the softened butter, cut into pieces, and then incorporate it into the flour with your fingertips. Combine the water, egg yolk, and fine salt, then pour the liquids into the center of the mixture. Shape the dough into a ball without overworking it: it should not be too elastic. Flatten the dough into a square and cover with plastic wrap. Refrigerate for 30 minutes to 1 hour. Onion Compote: Slice the onions and sauté them in a tablespoon of olive oil for one to two minutes. Season with salt and pepper, then add a quarter of the water. Evaporate the water over medium-high heat, then add more water until it evaporates. Repeat for 20 minutes. Then pour in the maple syrup and balsamic vinegar, mix well, then turn off the heat to let cool. Assembly: Preheat the oven to 180°C (350°F). Wash and slice the tomatoes, not too thinly, and set aside. Roll out the puff pastry on a work surface and brush the surface with mustard. Sprinkle the Parmesan cheese over the edges of the pastry and then form a log to create a crust. Add the onion compote to the center of the tart. Place the tomato slices and overlap them slightly. Press down well with your fingers, making sure to cover the entire surface of the tart. Sprinkle with fleur de sel and bake for 25 to 30 minutes.
