Mithais Of India | Episode 1 - Part 2 | Apple Crumble Siddu Brulee

After learning the story of Sweet Siddu in Himachal Pradesh, I wanted to bring it back into my own kitchen and ask a new question what happens when a traditional mithai is translated through the lens of modern pastry? In this second part of Episode 1 of Mithais of India, I take everything Siddu left me with its texture, its warmth and the memory of it and bring it into my own world of Indian × modern pastry. The plated dessert is inspired by the softness of steamed Siddu, layered with spiced apple notes, cinnamon crumble, white chocolate mousse and chocolate garnish all built around the feeling of the original mithai, while taking shape in a completely different form. This episode isn’t about changing Siddu. It’s about understanding it deeply enough to let it inspire something new. Mithais of India is a journey through the stories, traditions and regional mithais of the country and for me, a part of that journey is also exploring how these mithais can evolve in a contemporary pastry kitchen while still staying honest to where they come from.
