After our last video at Ma'er Gan Guo, many local viewers highly recommended this hidden hotpot spot—Shuangbei Shiguo Jiyi Hotpot (双碑石锅记忆火锅). Believe it or not, this is our very first time filming a traditional Chongqing hotpot on our channel! Honestly, the freshness and the price-to-value ratio of the ingredients here completely blew me away: The massive slices of fresh eel were so tender that they literally made me laugh out of joy. The fresh tripe was only 22 RMB (approx. $3) but came in a huge portion. But the real game-changer was the pig brains—they meticulously removed all the tiny veins, making it melt in your mouth instantly! I also unlocked my secret hotpot hack here: mixing garlic with raw rapeseed oil as a dipping sauce. It was absolutely mind-blowing. The total bill for two people was only 188 RMB (around $26). It’s a classic "Lizhi" (slightly sweet & savory) soup base, which is rich and aromatic rather than just overwhelmingly numb and spicy. What I loved the most was the local, laid-back atmosphere here. Watching the cars pass by and the locals enjoying their lives, it has a slow-paced, authentic vibe that you can never find in touristy areas like Guanyinqiao or Jiefangbei.
