Servings: 6 Cutting size: 7cm in diameter, 2cm in thickness Ingredients: Crust: all-purpose flour 125g, almond powder 15g, powdered sugar 50g, frozen unsalted butter 70g, salt 1g, whole egg 25g Matcha Ganache: white chocolate 100g, matcha powder 5g, whipping cream 220g Tips: 1.Butter needs to be cut into cubes and frozen in advance. 2.If the pastry becomes soft, refrigerate for minutes at any time until firm. Instructions: 1.To make crust, add all-purpose flour, almond powder, powdered sugar, salt and frozen unsalted butter into the blender to crush until the mixture looks like fine bread crumbs. 2.Pour whole egg to mix into a dough and use a scraper to press and grind the dough on a flat plate or board until smooth. 3.Divide the dough in half and roll them into a rectangle with 2mm in thickness, then freeze for 1 hour until completely firm. 4.Take out one piece of pastry, cut 6 long stripes about 24cm in length, 2.5cm in width, then chill for later use. 5.Take out another pastry, use the round cutting mold and cut 6 circles as the bottom of the tart, place the stripes inside the mold as the side of the tart, gently tap around the side and bottom and cut the excess pastry, then chill for 20 mins. 6.Preheat the oven to 170°C/338°F and bake for 18-22 mins, once baked, let it cool and remove the cutting mold. 7.To make matcha ganache, heat white chocolate over hot water until melted, then add matcha powder and stir well. 8.Heat whipping cream until almost boiling, add matcha chocolate and stir evenly (If the ganache is not smooth, it can be sifted for one time). 9.Pour the matcha ganache into the crust and chill for 4 hours at least until set.
