Traditional Croatian Peka- Local Stories Ep 15
In this episode we learn to make Croatian peka; a delicious traditional melody of meat and vegetables, slow-cooked in an open fire under a 'dome' shaped bell. This traditional Croatian dish is well-loved by Croatians, as it can be cooked in large portions and shared with family and friends. What makes Peka unique is the equipment used and the way in which the dish is cooked. Whilst Peka is the traditional name, the dish can also be called 'ispod čripnje', which literally translates to 'under the bell', referring to the dome-shaped lid under which the tender meat and vegetable meal is cooked. The dome-shaped lid is traditionally made out of terracotta or iron and is covered with hot coals to give a smokey, tender flavor to the recipe. Another key factor in making Peka is that it is traditionally slow-cooked for hours over hot coals, on a stone fireplace with burning embers on top of the bell. There are plenty of variations in Peka recipes, and each family will most likely have their own recipe! The most common ingredients include octopus, lamb, veal or chicken, potatoes, carrots, and peppers.
