Venison Jerky In The Oven

It may not be quick, but it is pretty EASY to make a batch of venison jerky that will keep you and your buddies, or your family fueled up with a healthy snack on your next adventure. You can use any meat. Elk. Bison. Beef. You can also use this same mix in your dehydrator with amazing results! Today we are using a LEM Backwoods Sweet & Hot Jerky mix along with 4 pounds of ground venison. We also added 5 oz of cold water which we mixed the jerky seasoning and cure in. For added flavor we added 1 tsp garlic salt and 1 tsp of paprika. Mix the seasoning well then pour it over the meat. Mix well by hand or meat mixer until it becomes tacky. At this stage we added 1/3 cup Asian Zing sauce for a bit of extra kick. Mix again and then begin your process. Using a jerky gun fill firmly then make your strips until all the meat is used. You can do this method in a oven or dehydrator. We used an oven today. Cook on 200-225 for 1 hour and 15 minutes per side. Flip and cook another hour and 15 minutes until the meat is the desired texture you are looking for. For us it took a little over three hours. We look for signs such as the jerky bending and then ripping with the texture of a commercial jerky. Once done store it in freezer or fridge and eat and enjoy!
