Elisa Fernanda teaches how to make GALETTE. The GALETTE DA BRETANHA recipe is a traditional French dish, a specialty of the chef. In this version, the FRENCH CREPE is served open and includes different ingredients such as BUCKWHEAT FLOUR. But it also contains BUTTER, EGGS, CHEESE, and HAM. #NhacGNT #EmployeeOfTheMonth #ElisaFernandes Ingredients: Dough: 125g buckwheat or rye flour 3g salt 350ml water 350ml whole milk 50g unsalted butter 1 egg Unsalted butter for cooking the crepes Filling: 400g coarsely grated Emmental cheese 400g cooked ham 6 free-range eggs 1 cup cherry tomatoes, quartered Salt to taste Ground black pepper to taste 1 bunch chopped chives 1 bunch wild arugula Preparation: Prepare the noisette butter by heating the butter until it is lightly golden and smells of almonds. Strain through a fine sieve and set aside. Mix the flour and salt in a bowl. Add the water and milk and mix well. Finally, add the noisette butter and the egg, beat well, cover with plastic wrap in contact and refrigerate for 12 hours. Before using the batter, mix again with the help of a spatula or hand mixer. In a frying pan, add two cubes of butter and let it brown slightly. Pour a ladleful of crepe batter and wait for it to brown. Gently flip the crepe and lower the heat. Fill with the cheese, the coarsely torn ham and the tomatoes, forming a kind of "volcano", in order to place the egg in the center. Crack the egg in the center of the filling and season with salt and pepper. Fold the four sides of the crepe, leaving only the egg uncovered. Cover so that the egg finishes cooking.
