Chickpea flour is a versatile ingredient that can be used in many kitchen preparations. Farinata is a very simple recipe, but it requires some tricks to be perfect and tasty. The thickness should be thin, so it's important to calculate the right amount of batter to put in the pan. The traditional preparation involves using a copper pan, but in a home oven, I recommend using a blue iron pan. As with all recipes, it's essential to make some tests to refine the preparation. Recipe for a 30x40 cm (approximately 12x16 inches) Farinata: Ingredients: 220g chickpea flour 670g water 7.5g salt 40g extra virgin olive oil Procedure: Preparing the Batter (09:00 AM): In a large pitcher, pour the chickpea flour. Gradually add water, whisking to avoid lumps. Once all the water is added and the batter is smooth, remove any foam on the surface with a spoon. Let the batter rest for at least 4 hours in the fridge. This step is important to allow the chickpea flour to hydrate completely. Preparing the Pan (01:00 PM): Preheat the oven to 250°C (480°F). Grease a 30x40 cm (approximately 12x16 inches) pan generously with olive oil (I used a blue steel pan). Take the batter out of the fridge, add salt, quickly whisk it, and remove any foam that has reformed. Pour the batter into the pan. Cooking: Place the pan in the preheated oven. Bake for about 20-25 minutes in a static oven at 250°C (480°F) on the lower rack, or until the farinata is golden and crispy at the edges. Cooking time may vary depending on the oven, so keep an eye on it towards the end. Serving: Once cooked, remove the farinata from the oven and let it cool slightly. Cut it into slices or squares and serve it hot.
