It's kinda like deconstructed sushi. The Bun Chay is my take on the vietnamese noodle salad. It's a cold, refreshing dish with a good kick and freshness from the herbs. The lentil tortilla salad is somewhat based on this recipe from Pick up Limes: https://www.pickuplimes.com/recipe/bo... It's my simplified version and a slightly different seasoning/sauce, but both are great! It's got a good mix of crunch, creaminess, and is highly requested by people I've made it for in the past! They're all super quick to make, taking 15 minutes or less. They all have elements you can get going in the background whilst you do the rest of the prep, it comes together so quickly and tastes absolutely phenomenal. They are perfect recipes for summer, so you don't have to turn on an oven, or stand over a hob - they're simple, fresh and can be enjoyed hot or cold. Cannot recommend them enough!
