Foolproof Chicken & Potatoes in Instant Pot

Today I'm making a beginner friendly, super EASY One Pot Chicken Thighs and Potato dish in the Instant Pot. I'm testing the Instant Pot Duo Plus Whisper Quiet at the moment so I make it in there but you can make this in any Instant Pot using the pressure cook function. This dish is a real staple for us and you can vary up the ingredients to your liking. It's so good to have one-pot dishes like this to lean on in those tough weeks and this one never fails me!
