Easy Kerala Egg Roast Recipe | Spicy Egg Roast

Ingredients Egg-5 or 6 nos Onion - 4 nos Tomatoes - 2 to 3 nos Ginger - 1 nos Garlic - 3 to 4 nos Green chilli - 1 or 2 nos Curry leaves - 2 to 3 sprigs Red chilli powder-2 tsp Pepper powder - 1/2 tsp Cumin seed - 1 tsp Salt - 1 or 2 tsp Oil - 1 or 2 tsp Method Place water in a pan and add salt. Then add salt and eggs, cover and boil them well. Then cut and peel the tomatoes and onion. Then washed the tomatoes, onion and green chilli. Chop the onion, tomatoes and green chilli, set aside. Remove the lid and check whether the egg is well cooked or not. Then peel the eggs and cut them into half. Heat oil in a frying pan and place the egg pieces. And sprinkle some red chilli powder, pepper powder and salt on top. One side is fried, flip the other side and fry them well. Once it is fried, removed from the fire and set aside. Heat oil in a pan, add cumin seeds. Then add the chopped onion and green chilli, saute them well for a few minutes. Then add salt and sauté them well. Then add crushed ginger, garlic and green chilli and saute them well. Add curry leaves and sauté them well. Then add red chilli powder, gram masala, turmeric powder and pepper powder. Add the chopped tomatoes and saute them well for a few minutes. Add water and mix them well and cook for a few minutes. Add the fried eggs and cook for a few minutes. Remove from fire and set aside.
