Gajbajo / Mixed Vegetable Curry / ಗಜಬಜೆ

Gajbajo or Gajbaje is a GSB (saraswath) cuisine which is a no onion no garlic dish that can be made during festivals. It is a simple tasty dish that adds a lot of flavour to the meal. Basically it is a variety of vegetables cooked in coconut curry. Any type of vegetable can be used in this dish which include full corn cut to rings, ivy gourd, yam, pumpkin, jack fruit seeds, bambooshoots, leafy vegetables, ladys finger, turnip, chow chow, brinjal, potato, sweet potato, beans, cow pew beans, tapioca, chana, green gram, black eyed beans, pulses of any type basically any kind of vegetable. Even the coconut curry is simple, just coconut, fried coriander & urad dal, red chillies and tamarind.
