Long time no see, missed y'all! Welcome back to the vlog🤍 lots going on in life right now so bringing you up to speed a little bit and taking you along for Memorial Day weekend! This was a very typical weekend in our life hanging with friends, working out, lots of walks, grocery hauls, and more! ILY -- SHEET-PAN CASHEW CHICKEN: -1-1.5 lb chicken breasts -2 bell peppers (I used red and yellow) -1 medium red onion -2 cups (ish) broccoli -1/2 cup coconut aminos -3 tbsp hot honey -2 tbsp sesame oil -2 tbsp rice vinegar -3 tsp grated fresh ginger -4 minced garlic cloves -a few handfuls of unroasted, unsalted cashews -rice of choice for serving -green onions for topping Preheat oven to 425. Combine coconut aminos, hot honey, sesame oil, rice vinegar, grated ginger, and garlic in a bowl. Chop veggies and add to sheet pan. Pour about 2/3 of the sauce mixture onto veggies and mix well. Place in oven and let bake for 15 minutes. While veggies are in the oven, cut chicken into cubes and combine with the rest of the sauce. Remove veggies from oven, add chicken and cashews to the sheet pan, and place back in the oven for another 20 minutes.
