Victoria Sponge with Mascarpone Cream & Blackberries Recipe For the sponge: 225 g unsalted butter, softened 225 g caster sugar 4 large eggs 225 g self-raising flour 1 tsp baking powder 1 tsp vanilla extract 2 tbsp milk (if needed) For the filling: 250 g mascarpone 200 ml double cream (30%) 2–3 tbsp icing sugar 3–4 tbsp blueberry conserve Fresh blackberries For the syrup (optional): 3 tbsp water 1 tsp lemon juice ½ tsp vanilla extract 1 tsp orange liqueur Method 1. Preheat the oven to 180°C (160°C fan). Grease and line a 20 cm (8-inch) round cake tin. 2. Beat the butter and sugar until light and fluffy. Add the eggs one at a time, then mix in the vanilla. Fold in the flour and baking powder. Add the milk if needed to make a soft batter. 3. Bake for 30–35 minutes, or until a skewer inserted into the centre comes out clean. Leave to cool completely. 4. Slice the cake horizontally into two layers. 5. Mix the water, lemon juice, vanilla extract, and orange liqueur, then lightly brush both cake layers with the syrup. 6. Whip the mascarpone, double cream, and icing sugar until thick and smooth. 7. Spread the mascarpone cream over the bottom layer, then add a thin layer of blueberry conserve and arrange the fresh blackberries on top. 8. Place the second cake layer on top and finish with another layer of mascarpone cream. Decorate with extra blackberries if desired and serve chilled.
