Ā Ā /Ā thebusybakerblogĀ Ā Ā Ā /Ā busybakerblogĀ Ā Ā Ā /Ā _createdĀ Ā Ā Ā /Ā busybakerblogĀ Ā š CHECK OUT OUR E-COOKBOOKS: https://shop.thebusybaker.ca/ āļø Sign-up for our FREE No-Fail Guide to Healthy Summer Entertaining e-course: https://bit.ly/3M0JJY2 HALLOUMI SALAD Ingredients For the crispy chickpeas: 15Ā ouncesĀ canned chickpeasĀ rinsed, drained, and dried 2Ā tablespoonsĀ olive oil 1/4Ā teaspoonĀ salt 1/4Ā teaspoonĀ garlic powder 1/2Ā teaaspoonĀ smoked paprika For the dressing: 3Ā tablespoonsĀ olive oil 2Ā tablespoonsĀ red wine vinegar 1/2Ā teaspoonĀ dried basil 1/4Ā teaspoonĀ salt 1Ā teaspoonĀ dijon mustard For the salad: 1Ā large blockĀ Halloumi CheeseĀ (approximately 1 cup) 6Ā cupsĀ mixed greens 1Ā cupĀ halved cherry tomatoes 1Ā cupĀ cucumbersĀ sliced 1/2Ā red onionĀ thinly sliced Instructions For the chickpeas: Heat a pan over medium-high heat. Add the chickpeas to a bowl along with the olive oil, salt, garlic powder and paprika. Toss very well to coat. Add the coated chickpeas to the hot pan and brown on all sides until golden and crispy (this should take approximately 8-9 minutes). Set them aside on a plate to cool. For the dressing: Add all the dressing ingredients to a mason jar and shake well to combine. Set aside. For the salad: Slice the Halloumi cheese into 3/4-inch thick slices and grill for several minutes per side until dark golden brown Add the greens to a platter or bowl with the sliced onions, halved cherry tomatoes and chopped cucumbers. Add the cooled chickpeas on top of the veggies, along with the grilled Halloumi.
