Lamb is an excellent meat, but as it ages it begins to be called mutton and often acquires strong, characteristic aromas that not everyone likes. There are typical meat sheep breeds. You can obtain really good raw material from them and not be afraid of the previously mentioned smells. They are very limited or non-existent. Of course, this meat has its own specific taste and aroma, but the same can also be said about beef or game meat. I bought half of a sheep carcass. I kept the hind leg and shoulder for roasting, and made delicious kabanos sausages from the rest. I definitely didn't regret this choice.
