Ingredients for 1 Scacciata (9 standard portions or 12 small portions): 1 kg flour: 500 durum wheat semolina, 500 type "0" soft wheat flour for pizza and focaccia 220 g sourdough starter, doubled in size at room temperature 50 ml extra virgin olive oil 600 ml water at room temperature 1 heaped teaspoon salt 600 g Sicilian Tuma cheese 240 g cooked ham 5 long onions 4 filleted anchovies Extra virgin olive oil to taste Ground black pepper to taste Method: Mix the semolina flour with the type "0" flour, then add the ready-made sourdough starter, doubled in size at room temperature, breaking it up by hand. Then add the extra virgin olive oil and a little of the water called for in the recipe. Regarding the latter, as a general rule, you should always add it gradually while kneading so you can monitor its absorption with the flour. Once the dough is almost formed, add the salt and finish kneading in the mixer. Divide the dough into two balls and knead them on a clean surface until smooth and round. Let them double in size in the turned-off oven (in my case, it took about 4 hours). Grease a cast iron baking pan with olive oil, making sure to coat the corners. Lay out the first doubled ball of dough on the baking pan, then fill it with the sliced ​​tuma cheese, the cooked ham, the chopped onion, the anchovy fillets, a sprinkling of black pepper, and a drizzle of oil. Close with the other ball of dough, seal it by forming the edges. Make a hole in the center of the scacciata (the "chimney"), which will greatly help ensure the scacciata is perfectly cooked. Bake in a preheated oven at 240°C (465°F) for half an hour, up to 40 minutes. If you can't reach 240°C (465°F), the highest temperature your oven can handle is fine.
