Candied Peel Muffins (Or Soft Dried Apricot Muffins)

This very quick and. easy recipe uses my lovely soft candided peel, both orange and lemon, stirred into a muffin batter. The muffins are soft, gently spiced and with that lovely citrus hit too. But you can swap the peel out, if you don't have it, for soft dried apricots, or sultanas.
