State Fair Blue Ribbon Fig Bars

Ingredients: Dough 1 cup butter, softened ¾ cup sugar ¼ cup brown sugar 2 cups flour ¼ teaspoon salt 1 egg yolk Filling 4 heaping cups fresh figs ½ cup sugar Lemon juice from half a lemon Lemon zest ¼ teaspoon cinnamon Directions: Wash the figs and cut the stems. Cut figs in half and place in a 2-quart pot. Add ½ cup sugar and ¼ cup water. Add the juice and zest from ½ a lemon. Bring mixture to a boil and simmer for 15-20 minutes. Cool. Add cinnamon. Purée figs in a blender. Preheat the oven to 350F. Lightly grease a 9x13 pan, then line with foil that overhangs the edges of the pan. In a medium mixing bowl cream together the butter, sugar and brown sugar until light and fluffy. Blend in the egg yolk, then the flour and salt. Divide the dough and press ½ on the bottom of the baking pan. Spread 2 cups of the cooled fig purée on top of the dough. Crumble the remaining dough mixture on top of the fig purée. Bake for 45 minutes. Cool in pan before slicing. If desired you can drizzle icing on top by combining 1 cup powdered sugar with 2 drops of vanilla and enough milk to make a thin icing.
