Noma Kyoto – $1000 Japan Pop-up by René Redzepi

After years of pandemic delays, Noma’s next pop-up finally took place – in Kyoto, Japan. René Redzepi and his team flew from Copenhagen to Japan for a three month residency at the Ace Hotel in Kyoto. They transformed one of the hotel’s restaurant spaces into a zen garden-like dining room. The food was neither purely Nordic nor Japanese; the menu highlighted the ingredients of spring in Japan, with an obvious Noma thumbprint. Noma Kyoto exceeded expectations and was well worth the journey to Japan. Watch the video to see the full meal.
