Noma Kyoto – $1000 Japan Pop-up by René Redzepi

After years of pandemic delays, Noma’s next pop-up finally took place – in Kyoto, Japan. René Redzepi and his team flew from Copenhagen to Japan for a three month residency at the Ace Hotel in Kyoto. They transformed one of the hotel’s restaurant spaces into a zen garden-like dining room. The food was neither purely Nordic nor Japanese; the menu highlighted the ingredients of spring in Japan, with an obvious Noma thumbprint.
