Miguel travels to the Hacienda de San Francisco Tecoac in Huamantla, Tlaxcala, to visit Lulú, who shares a very special dish: chicken al meyolote, prepared with rajas (spiced peppers), mushrooms, cuaresmeño chili, fava beans, and maguey stalks, the base of this recipe. She also makes delicious escamole gorditas and an exquisite mushroom xoloxtle with potatoes and cactus.
