These eggless Hot Cross Buns are well flavored with spices, raisins and mixed peel. The heavy whipping cream replaces the eggs seamlessly, making these Hot Cross Buns irresistible and delicious! Ingredients: 1 cup evaporated or full cream milk ½ cup granulated sugar 4 tsp instant yeast ½ cup unsalted butter, room temperature ½ cup heavy whipping cream ¼ tsp grated nutmeg 1 tsp ground cinnamon ½ tsp all-spice ½ tsp vanilla extract, optional 4 – 4 1/4 cups all purpose flour ¾ tsp salt ½ cup raisins 3 tbsp mixed peel Glaze / Simple Syrup ½ cup granulated sugar 3 tbsp water ½ tsp vanilla extract Icing for the cross: 1 cup icing sugar, sifted 2-3 tbsp milk or water *Start with 4 cups of all-purpose flour, and only if needed add up to ¼ cup extra. The dough should be soft but not sticky. *Bake in a preheated oven at 350 ° for 30-35 minutes until golden. *You can replace the heavy whipping cream with 2 large eggs Enjoy!
