Ingredients 300g all-purpose flour 2 tsp baking powder ½ tsp baking soda ¼ tsp salt 2 eggs 200g caster sugar 115g butter, melted 240g yogurt ½ tsp vanilla extract 250g blueberries (fresh or frozen) Instructions Preheat your oven to 180°C (350°F). In a large bowl, whisk together the flour, baking powder, baking soda, and salt. In a separate bowl, whisk the eggs, caster sugar, melted butter, yogurt, and vanilla extract until smooth. Add the wet ingredients to the dry ingredients and mix until just combined. Do not overmix. Gently fold in the blueberries. Divide the batter evenly among a lined or greased muffin tray. Bake for 15 minutes, or until the tops are lightly golden and a toothpick inserted into the center comes out clean.
