We followed Chef Sagara, author of "The Idea and Assembly of Croissants," closely and got to see all of his world-class croissant-making techniques. (@sagara_croissant) Chef Sagara is always thinking about bread. What kind of bread is he aiming for? He then works backwards from there to unravel all the elements: The manufacturing method, temperature, fermentation, shaping, etc. So, from croissants to viennoiserie and hard croissants, everything is beautiful and delicious.
