Beat until white and fluffy. 2. Sift in the flour and cocoa powder and mix until powdery. Pour the batter into a mold lined with a cookie sheet and bake in a preheated oven at 170℃ for 25 to 30 minutes. 3. Remove the sponge cake from the heat and slice into four 10mm slices. 4. Melt 80 g of sweet chocolate in a pot of hot water. Add milk in two parts and mix until smooth and emulsified. 5. Add the sugar to the cream and whisk until thickened while chilling in ice water.
