Add salt generously and let stand for 10-15 minutes to remove bitter substances. Then rinse and pat dry with kitchen paper. Finely dice the onion and chop the garlic. Sauté 🍳 Heat olive oil in a pan. Sauté the onion until translucent, then add the garlic and fry for another minute until a wonderful aroma develops. Add the diced aubergines and fry over medium heat until golden brown on all sides. Prepare the sauce 🍅🥫 Add the tomato paste and cherry tomatoes (whole or halved) to the pan. Add a pinch of sugar to balance the acidity of the tomatoes. Mix everything well. Braising and seasoning 🌿 Season with black pepper, basil and oregano. Reduce the heat, cover the pan with a lid and let everything simmer for about 7-10 minutes, until the eggplants are tender.
