Ingredients Makes 2 Okonomiyaki Batter ¾ cup + 2 tbsp (100 g) cake flour (or all-purpose flour) ½ cup (120 ml) water 1 tsp Japanese dashi powder 2 large eggs ¼ cup (50 g) grated nagaimo (Japanese mountain yam) About 5 cups (300 g) finely chopped green cabbage ½ cup (30 g) chopped green onions ⅓ cup (20 g) tenkasu (tempura flakes) 2 tsp dried tiny shrimp (ami ebi) Topping 3 thin slices pork belly, cut into 4-inch (10 cm) lengths For Cooking 3 tbsp vegetable oil To Finish Okonomiyaki sauce Japanese mayonnaise Aonori (dried green seaweed) Bonito flakes (katsuobushi) Instructions 1. Roughly chop the cabbage. Grate the nagaimo. Cut the pork belly into 4-inch (10 cm) pieces. 2. Dissolve the dashi powder in the water. 3. In a large bowl, combine the flour, dashi water, and grated nagaimo. Mix until smooth. 4. In a separate bowl, gently combine the cabbage, green onions, tenkasu, dried shrimp, and eggs. 5. Add the flour batter to the cabbage mixture and gently fold until just combined. 6. Heat a griddle to *390°F (200°C)* or a frying pan over **medium heat**. Add the vegetable oil. 7. Divide the batter into two portions and shape each into a round about *6½ inches (16 cm)* in diameter. Cook for **3 minutes**. 8. Place the pork belly on top of each pancake. Flip carefully, cover, and cook for **3 minutes**. 9. Flip once more, reduce the heat to **low**, and cook for another **3 minutes**, or until cooked through. 10. Brush with okonomiyaki sauce, drizzle with Japanese mayonnaise, and finish with aonori and bonito flakes.
