In this review, I'm going to take a look at another beer from the Firestone Walker Brewing Company (‪@FirestoneWalker‬), and it's their Spumoni Pony, the 2026 vintage. This is an Imperial Stout that is aged in bourbon barrels with cherry and pistachio. An exclusive of Firestone Walker's 2026 Brewmaster's Collective, they're trying to replicate the popular Italian molded dessert, spumoni, in barrel-aged beer form. I'm a fan of it -- especially the pistachio -- so this sounds like it might be delicious. Did they nail it? Let's find out! This Imperial Stout rested for twelve months in a blend of six-year Four Roses Bourbon and six-year Pikesville Straight Rye whiskey barrels, allowing depth, warmth, and spirit character to fully entwine. 125 lbs of toasted pistachio lends a subtle, nutty richness, while 125 lbs of Luxardo cherry brings a measured sweetness and soft acidity, echoing through layers of dark chocolate, vanilla, and oak. The interplay between bourbon's rounded caramel notes and rye's gentle spice creates a composed, contemplative finish -- luxurious without excess, bold yet deliberate.
